Recipe for Khlat ( A beat salad served room temperature during my childhood in Damascus, Syrian). Last week I made it for my friend Sally at her house in Wellfleet but used canned beats :( instead of fresh cooked ones because we went swimming in Horseleech pond and ran out of time.
6 MEDIUM SIZE RAW BEATS BOILED UNTIL TENDER BUT NOT FALLING APART.
WHEN THEY ARE COOL PEAL THEM AND GRATE BY HAND OR IN A FOOD PROCESSOR.
MIX GRATED BEATS INTO A BOWL WITH THE FOLLOWING INGREDIENTS:
2 SMALL CLOVES OF GARLIC MINCED
1/2 CUP OF FRESH Lemon JUICE
1/4 CUP TAHINNI PASTE
1/3 CUP Excellent PLAIN YOGURT
SALT TO TASTE
Drizzle ONE TABLESPOON OF OLIVE OIL OVER PLATED SHALLOW MIXTURE
Garnish with chopped Italian parsley. Best if eaten with flat bread or Lamb kibbeh (minced lamb, onion, walnuts, and fine burgle)
